Crockpot Barbecue Pulled Chicken With Beer

I can honestly say this is one of the best crockpot recipes that I have ever made!  I make a lot of chicken dishes and it is not uncommon to hear my kids say “we are having chicken again???” Admittedly, I often make just a boring roasted chicken.  This time, I wanted to get a bit more creative.

This is the third beer recipe that I have made, and I am starting to believe that almost anything tastes good with a little bit of beer thrown into it 🙂

 Ingredients:

  • 3 lbs boneless skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp smoked paprika
  • 1/4 cup water
  • ½ tsp sea salt
  • ½ tsp pepper
  • 8 oz beer (I used a Hampshire Ale)
  • 24 oz barbecue sauce

 Directions:

Combine 6 large boneless chicken breasts (whole) and season with garlic powder, onion powder, paprika, salt, pepper, water and beer in a crock pot.  Pour in water and beer and 2/3 cup of barbecue sauce.

Cook on low temperature in a crockpot (covered) for approximately 8 hours.  After 8 hours shred the chicken with a fork.  Add barbecue sauce to your liking.

The pulled chicken is delicious on a bulkie roll or on a large whole-wheat bun.  Yummy with pickles!
